Sweet Potato Bread Ingredients:

1-3/4 cups all-purpose flour

1-1/2 cups sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

3/4 teaspoon salt

1/4 teaspoon ground allspice

1/4 teaspoon ground cloves

2 eggs

1-1/2 cups mashed sweet potatoes (about 2 medium potatoes)

1/2 cup vegetable oil

6 Tablespoons orange juice

1/2 cup chopped pecans


S.P. Bread instructions:

In a large bowl, combine the first eight ingredients. In a small bowl, whisk eggs, sweet potatoes, oil and orange juice. Stir into dry ingredients just until moistened. Fold in pecans. Transfer to a greased 9-inch X 5 inch X 3-inch loaf pan. Bake at 350 degrees for 60 - 65 minutes or until toothpick insert near center comes out clean. Cool 10 minutes before removing from pan to a wire rack.

TIP To keep bread super moist, wrap the bread tight in plastic wrap after the10 minute cooling period. Bread will still be warm but by wrapping it up you will keep the moisture inside the bread.

Special gift wrapping ideas

Buy some pretty glass loaf pans and bake the bread right in the glass loaf pan. Cover the bread and glass pan with colored plastic wrap and tie a ribbon around the whole thing.
